This tea is from the home of white teas, Fujian’s Fu Ding county. Bai Hao Yin Zhen is hand-plucked in the first two weeks of March and made using century old techniques. Functions:
- Exquisite and delicate, the tea produces a very pale yellow brew and has a fresh, sweet fragrance with traces of citrus.
- This tea has high concentrations of polyphenols (antioxidants that help fight against cancer-causing radicals and heart disease).
- The liquor holds a light apricot color and the taste is fresh and delicate with a pleasent high fragrance.
- This tea is a very good daily tea. It is also recommended as an efficacious remedy for the hives.
Brewing Instructions:
- Loose-leaf teas are best brewed using a teapot and strainer or stainless steel mesh tea ball.
- If using a tea ball allow room for tea leaf expansion by using one at least 2 inches in diameter for one 8oz. cup. Use 2 tsp. of tea to brew one 8oz. cup.
- Bring water to boil, remove from heat for 2-3 minutes. Water should be at 165-175 degrees.
- Brewing white teas at temperatures slightly less than boiling brings out the subtleties and sweetness. Brew for 2-3 minutes.
- This tea can be used for 3-4 infusions. The teas have a natural sweetness and do not usually require sweeteners.
